Grilled Chicken and Vegetable Skewers

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Assorted vegetables (such as bell peppers, onions, zucchini, and cherry tomatoes), cut into bite-sized pieces
  • Olive oil
  • Lemon juice
  • Garlic powder
  • Salt and pepper
  • Wooden or metal skewers

Instructions:

  1. If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning on the grill.
  2. In a bowl, combine the chicken pieces with a drizzle of olive oil, a squeeze of lemon juice, garlic powder, salt, and pepper. Toss to coat the chicken evenly with the seasonings.
  3. Thread the marinated chicken and assorted vegetables onto the skewers, alternating between the ingredients.
  4. Preheat your RV's portable grill to medium-high heat.
  5. Lightly oil the grill grates to prevent sticking.
  6. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
  7. While grilling, you can brush the skewers with a bit more olive oil or lemon juice for added flavor.
  8. Once the chicken is no longer pink in the center and the vegetables are charred and tender, remove the skewers from the grill.
