Grilled Chicken and Vegetable Skewers
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Assorted vegetables (such as bell peppers, onions, zucchini, and cherry tomatoes), cut into bite-sized pieces
- Olive oil
- Lemon juice
- Garlic powder
- Salt and pepper
- Wooden or metal skewers
Instructions:
- If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning on the grill.
- In a bowl, combine the chicken pieces with a drizzle of olive oil, a squeeze of lemon juice, garlic powder, salt, and pepper. Toss to coat the chicken evenly with the seasonings.
- Thread the marinated chicken and assorted vegetables onto the skewers, alternating between the ingredients.
- Preheat your RV's portable grill to medium-high heat.
- Lightly oil the grill grates to prevent sticking.
- Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
- While grilling, you can brush the skewers with a bit more olive oil or lemon juice for added flavor.
- Once the chicken is no longer pink in the center and the vegetables are charred and tender, remove the skewers from the grill.
- Serve the grilled chicken and vegetable skewers hot, accompanied by your favorite side dishes, such as rice, salad, or grilled bread.
Note: Feel free to customize the skewers with your preferred protein and vegetables. You can also marinate the ingredients with your favorite herbs and spices for extra flavor.
